Let’s talk about HVAC. H, V, A, C. It stands for heating, ventilation and air conditioning. And we can even add a slash R in there for refrigeration, you know. HVAC in a restaurant, is different than any other place. You can’t just call anybody who’s good in air conditioning. You can’t go to a phonebook and look up air, commercial air conditioning, and ask them to come to your restaurant to fix it. You know why? Because you have something in your restaurant called make up air. And unless your AC guy knows what make up air is, you could have a problem.

Your make up air has to be working correctly. And that people that are familiar with restaurants. So whenever you call AC guys, ask them: What is make up air? What is return air? Do they have experience with exhaust and ventilation, because your air condition can be working perfectly. But if your make up air isn’t working, you’re in trouble.
